Can the picture size be made taller verses wider null

Not really, you have a limited zoom but it scales both wider and taller, you can do some minor stretching to fit your screen if projecting from left or right

I think they are referring to the various aspect ratios that you can choose within the projector, I would look at projector central reviews of it to clarify it f you need
