Hello, phil. We appreciate your inquiry. The top grate on a lot of gas ranges is made to hold cookware in place and give the pans' bottoms an equal distribution of heat from the burners. It might not be a standard or advised adjustment to replace the top grate with a flat grill because doing so could affect the gas range's functionality and safety.
