“Will this GPS remember/track/store routes I've taken before? Like if I want it to remember a certain way I like to go to get instead of how it routes me.”

Yes and no it keeps the route but if you go a different way it doesn't keep the new route you created. I'm still working on that but it is very worth buying it.
