Can you use Garmin pay or Apple pay with this device? null

You need the ‘Plus’ model for music and Apple Pay. The Fenix 5S does not support those features, but the Fenix 5S Plus does.

No you cannot. You need to get the ‘plus’ version for garmin pay. I dont think any of them have ‘apple pay’
