The calorie counter on fitness trackers is only intended to be used as an estimate. They use resting caloric burn (Basal Metabolic Rate), the calories you burn just by sitting around- using your gender, age, height, and weight. It's the calories your body uses just to be alive and do things such as maintain body temperature, breathing, circulation, etc. That's what that number is. The device also incorporates active caloric burn. This is estimated using the accelerometer in the device and takes into account steps and the such.
