“Do I ever need to sync it to a computer? My grandmother (82) is interested in a device to track her steps and sleeping so this looked like a simple way to go. Does she HAVE to have a computer to read this information? Or can she just track it day-to-day on her own without ever having to use a computer?”

The vívofit does not require a computer for use, though it is recommended. The step counter resets each night at midnight. There is not a way to see the previous day's sleep or step data without syncing via computer or smartphone. ^DK
