“The instruction manual says to not operate the oven without the turntable and support in place. Does this mean keep them in while using the convection bake, convection roast and broil as well? Won’t the plastic support and wheeled ring under glass melt?”

yup.... means not to operate without the glass plate and ring in place. For the oven to cook properly regardless of mode there must be movement of the food being cooked. Without the rotation you may burn the item and/or cause a fire in the oven chamber.
