“I see that this works in a garage down to 38 temp . However, we plan to use in our Minnesota garage for the summer only. If we unplug for the winter and leave in the garage that will be colder than 38, will the fridge be damaged? Or will it be fine?”

Nope. The fridge will be fine, just the freezer won't run, so don't try and keep anything frozen in it. At needs to be above 45, and better at 50 for the freezer to work well.
