“How do I start just a rinse and spin after the original cycle is done? I've tried drain & spin with extra rinse and deep rinse selected but it just spins and doesn't do a rinse first.”

In order to achieve a rinse and spin, you will want to select Drain & Spin like you've mentioned, but make sure that "Deep Rinse" is selected on the option knob. This will rinse the clothing briefly, the proceed to spin. If you are having issues with the controls, we recommend trying out an electronic reset, by unplugging the power cord for 2-3 minutes, then plugging it back in.
