Good day, Stainless Steel knobs can be made of different materials: On most GE Cafe Series and some GE Profile cooking products, they are die cast metal. Check product specifications to confirm. On all other Stainless and Slate models, they are electro-plated plastic but they are weighted so they have the feel of metal knobs without the heat issues. Color-matched plastic knobs are made of temperature resistant electroplated plastic coating. Thanks for reaching out. Stay well! Mike@GEA
