Hello. Thanks for reaching out! There is a grate available to use. The model number is JXGRATE1. The griddle is nonstick aluminum. This unit comes with a No Preheat Air Fry feature. Many people use air fryers to achieve the same result as dehydrating. It also comes with Warm mode that can be used to keep foods warm for up to 3 hours. It is recommended that it not be used to heat cold food other than crisping crackers, chips, or dry cereal. The grates and griddle in the center on the model I received are cast iron and are not non-stick - although the paperwork does seem to indicate they should be. It is a rough cast iron material. The manual does state that "some models" come with nonstick aluminum - this was not an option offered to me when I purchased mine. The manual goes over all the recommended uses for the oven but does not mention dehydrating. The closest thing would be using the warm setting and not for more than 3 hours.
