Hi Stephgeewhiz- Thanks for choosing GE! The aluminum griddle included has a non-stick coating (same family as Teflon). The range is also compatible with REVERSIBLE CAST IRON GRILL/GRIDDLE JXGRILL1 (sold separately) and CENTER CAST IRON GRATE JXGRATE1 (sold separately). Think it’s Teflon because it is. not cast iron. There is a very long burner underneath. So you can’t really remove it.
