Hello Nanny - Thank you for the excellent question. We are always happy to talk about this amazing cooktop. You certainly can use a pressure canner with this cooktop. Flat bottomed canners must be used and make sure the canner is centered over the surface unit. Please let us know if you have any more questions. - JB
