Hello StevenB - Thank you for the excellent question. We are always happy to provide more information on our wonderful Advantium ovens. The 240v model will cook twice as fast as the 120v and preheating is not needed. However, if you are installing the unit under a counter, the 240v is not approved for this but the 120v is.
