Go on-line to GE and download the manual for your model (reasonably detailed instructions and trouble shooting hints). Sanitize works if we select the option AND we don't interrupt the cycle by opening the door AND our water temp must be sufficient (water heater control). Under all circumstances, we usually remember to run the water at the kitchen sink until its hot before we start the dishwasher. But we don't sanitize much for the reason you stated, 3 hours run time; you want sanitization, it takes time.
