Yes you can set the temp to whatever degree you want and it will hold it there until the schedule changes it back if it is set. And yes you can have multiple devices control the thermostat.

Yes. You can manually override and hold, and later go back to a schedule or Auto. 
You can have more than one phone used for home and away. The phones you use will have to have the nest app downloaded with location services turned on and with home/away assist turned on as well.
