“Will this unit work as just a remote temperature monitoring device without having a Nest thermostat? I simply want to be able to monitor the temperature at our cabin from home or for our home while away in winter. We have wifi at both locations.”

The sensors only work in conjunction with a Nest thermostat. To do what you are seeking, you may want to consider some other WiFi based technologies that should be mainstream by now.
