Yes, there is an option to turn it off. You have to be the one to turn it on to begin with.

You can turn off the Assistant on the Pixelbook, but I wouldn't worry too much about it. Only one of them will actually respond, and they will both do what you need. I have a Mini in my office, where I use my Pixelbook all day long, and I've actually never had the Assistant on the Pixelbook respond, it's always the Mini that responds to me when I say "Hey, Google."
