• You should have no issue doing that. I have chomecast on every television in the house and they are all connected.

• Yes, you can connect a Roku to a Google WiFi AP (wireless, of course) I currently have a Roku Premiere connected to Google WiFi in my bedroom on a 46" 1080p Vizio, with no lag/buffering (main AP is located across the house in the office) Highly recommend it... get the three pack if you have a medium-large house OR had issues with a single AP in your home.
