“Would this work to do a live demonstration fed to a large TV or projector? Would I need other cords, adapters, etc.? I do not need to record for the demos, but would still use it other times for recording(obviously it does this).”

I’ve used quick app, and Bluetooth streamed video from the GoPro and monitored the go pro from my iPad Pro, I also had full remote control of the go pro device. Quality was not the greatest because it needs a lot of light to get good footage

To get the video feed onto a monitor or other type of screen, you'd need to use the Media Mod for the HERO10 Black. The Media Mod has an HDMI out port. With that, you can connect a micro HDMI cable that you can then connect into your monitor or system.
