“If I am watching content from my satellite TV source (Direct TV) connected to the TV via HDMI cable, will connecting a headset via the audio jack shut off the set speakers. I ask because the Insignia TV I bought won't do that.”

Some TVs shut the speakers off automatically but sometimes you may need to go into menus and shut them off in audio settings, which was probably the case with the old TV you speak of.
