“I'm not getting a center channel audio for the Disney+ movies no matter what setting I try on the TV, and even on Netflix not all shows or movies noted as 5.1 do either. What's odd is a few do work correctly like on Netflix Avengers movies.”

If you are getting image displayed then the television is doing it's job and as such you would need to contact the manufacturer of the surround sound that you have connected.
