Absolutely, that's what they were intended for in the first place. The collectors won't take them out of the packages, because they want to eventually get rich selling them. But some cars, like the treasure hunts and maybe some of the rarer paint jobs are most likely the only ones that are really worth much. Go ahead and take them out of the package and have some fun. Try to find the heavier ones, not that a lot of the newer ones are all that heavy, more plastic than metal these days. When I was young they were all metal, very heavy and rolled nice and smooth. Now they are kind of "tinky" as in too light and a bit noisy, but can still be a lot of fun.

Some have special features like a place for little figures (not sold with the cars) to hang on the back, special finishes like chrome, the front grill extending, etc. Most can be used with track sets (not all work on all tracks) but you don't need it. You can even buy pieces of track separately. Collectors leave them in packages and even put in protectors. They tend to be particular about the condition of the packaging, even the normal shelfwear on the edges. : )
