Windows 10 in S mode is a version of Windows 10 that's streamlined for security and performance, while providing a familiar Windows experience. ... To increase security and performance, Windows 10 in S mode runs only apps from the Microsoft Store.
You can migrate to Window 10 regular version for FREE.  It is a one time one way migration.  Here is  a link on how to do this.

This mode is not easy to change. I had a difficult time trying to download this. I hate that the chose this mode. Give me an option. This is the worst thing Microsoft could have ever done. Angry!

Yes you’re able to change it it’s a small pen icon in the screen
