When you add your old email address most of the information will sync with the new computer.

Windows (and some programs) tend to store data files in several different locations, so the easiest thing would be to have the Geek Squad at your local Best Buy do that data transfer. And because installed programs again scatter files in multiple locations, you'll still need to install all of your programs.
