• Yes, Windows 10 S mode can easily be turned off and regular 64 bit Windows 10 can be used instead. Kind of annoying that S mode exists in the first place, but it can be turned off.

• Yes, Windows 10 can be deactivated and converted to Windows 10 Home. Microsoft has the directions for doing that.
