I have to go to File - Print, and then to Print using system dialog on my Mac to see default settings and make sure Black and White is not checked.

you might want to check the color cartridge.

All I can think of is to check to make sure that your color option is selected when your "print" box shows up. Other than that you might need to contact HP help desk to figure it out.
