You'll need to get a copy of Windows 11 S mode from the Microsoft store, format the drive, and then do a clean install of the new version of Windows 11. An alternative option would be to leave the current Windows installation and during the setup, have the computer so that it can only download and run apps from the Windows store. That's one of the main security features of a computer running S mode.
