“Ink - Can I continue to print black and white documents when the color cartridges are empty? Or are the color cartridges required for operation? Most of my work is black and white text letters.”

This would not be the best choice for that use because you do need all the cartridges to be flowing in order not to damage the printheads. If you don't use the color at all the ink will dry up. If you never want to print in color again, that's fine, but you won't likely be able to print color in the future. And no, you can't print past the short grace period if the color cartridges are empty.
