“is the trial software worth anything? What happens after the 1 year trial for Windows 365 expires? Do I then need to buy it? If so, why not just buy it up front? Is there any other reasonable option?”

Microsoft Office comes as 365 for one year or Office 2013. You might as well use the free 1 year trial as opposed to buying what you already have. Besides, you can update to the next version of Office when it comes out should you choose to
