Hi there! Yes, this PC would be great for sim racing. Modern PC hardware is very capable and even older generation components are more than capable of running sim racing titles. While we don't suggest this PC model at max graphics settings with multiple 4k resolution monitors, normal gaming on 1080p or 1440p will work great.
