“My days off are Sunday and Monday, can you set the 5 day alarm for those day? How does the alarm clock know "weekdays"? Can I off set it by one calendar day if it uses the calendar to "know" weekdays?”

Weekdays is the standard Monday - Friday and it cannot be altered for having Sunday/Monday off. You can set the alarm to come on daily and simply turn it off not to come on for Sunday and Monday. It is a one button press so it does not alarm the next day.
