How is it with frying fish? null

I specifically bought this so I could cook fish outdoors and not stink up the house. Works great.

This is good for frying in any desired level of heat.

I fried some chicken cutlets and it seemed the heat was very irregular. It got really cool, then really hot, so it seemed like it was cycling on and off, even though I kept the controls at the same level.
