- A:Answer Yes, your 15" cast iron skillet is too big. Cast iron does not spread heat well. You will see the outline of the induction coil in bubbling water, Ask Insignia what the diameter of the coil is. Low cost units like this often suffer from the use of 4-6" coils which will be your effective cooking area on that pan with no cooking occurring outside that diameter. Experienced induction buyers always ask questions about the size of the coil. They will also buy pans that spread the heat better. If using a dutch oven filled with liquid this is much less of an issue than with a fry pan. When buying induction to use with a skillet always perform the chopped onion caramelization test during the return period.
