“Can the "bottom rack" which appears to be rectangular, rather than having curved areas for the bottles, be removed? I am wondering if that would permit beer bottles to be stood up in the bottom of the cooler.”

Yes, it can easily be removed and the space used to store other items. Note: The bottom rack is actually designed to hold wine bottles.
