“I like to pause a lot while watching TV. Whenever I've had the TV paused or not playing anything for longer than 10 minutes or so, it shuts itself off. I have tried going in and making sure my sleep timer is set to OFF, but 'OFF' is not an option. Help!”

This is normal behavior and cannot be disabled. Try to keep a video playing on the screen for the TV to stay on.
