I own this exact model and when you press settings there is no display/sound menu item. I have gone through all the menus and this model does not seem to have a default option for power on. The previous answer must be speaking about a different model.

To set your Insignia Fire TV to automatically power on to HDMI2 (or any other input), follow these steps: From the TV’s home screen, go to Settings (located on the far right), then select Display & Sounds. Next, choose Power Controls, then Power On, and finally select Last Input, making sure there’s a checkmark next to it. This setting ensures the TV will return to the last input used—like HDMI2—when powered on. After enabling this, go back to Settings, select Input, and choose HDMI2 to make it your current input. Now, try turning off your TV and powering it back on to confirm that it automatically returns to HDMI2. If it does, the setting is working correctly. Keith | Insignia Support
