“Is it possible to control with Google Home? I can’t seem to find anything that clearly answers this and I would love to be able to turn it off and on via Google Home”

No unless you have a Chromecast device (or another compatible streaming device) plugged into your Insignia TV that can then connect to the google home allowing it to control the tv or you can plug an HDMI cord in and control it via that way
