“Why does do my external speakers randomly "pop" when the TV is off? Also why is there not setting to prevent the TV from going to sleep”

Hi Adam! Thanks for your question. A popping sound from external speakers when the TV is off usually happens when the connected audio device powers down at a different time than the TV, or from small electrical fluctuations in the audio connection. This is common with soundbars and receivers. This model also doesn’t include a setting to fully disable sleep mode, as it’s designed to enter sleep automatically to save power.
