You cannot change the pressure. Once locked it starts pressurizing b4 the cooking phase. You can only alter the time. Or choose from preset meal types. Not the same design as a slow cooker with high & low temperatures. Also not familiar with a digital pressure cooker that has a pressure gauge that can be altered manually.
