“The directions say this refrigerator requires almost 8” of clearance on both sides and almost 6” in the back. Most fridges only require an inch. Are there issues if you leave only 1”?”

I put one in an RV. I put some vents in the cabinet it is sitting in where they don’t show. It seems to be fine
