“Will this product allow me to connect to a very old Bose Wave equipped with composite AV jacks only? I use to hook up the Bose to my old TV from AV jacks to AV jacks, my new TV does not have AC jacks.”

It will if your TV has HDMI output, This is specifically made to have an HDMI output to standard RCA input.
