“I have an LG tv with RCA output and an older Bose CineMate Series II digital speaker system with an 'optical in' connection. Will this converter enable me to play my tv sound through the Bose system? If so, is it a simple plug and play? Thanks!”

No it will not work. The conversion is digital to analog, not analog to digital. The signal is directional. You need an analog to digital converter (RCA input, digital (optical or coax) output)
