No, the app/WiFi makes it much more user friendly but you are able to just click the clean button:)

I suspect it would work without WiFi, but you lose scheduling and maps and history access and you’d have to start it manually for each and every cleaning event

No... wifi is only need if you're using the iRobot app on your phone.

No - all Roombas can be operated with a simple push of the Clean button on the robot. Without the app, you simply won't be able to schedule or, in the case of the Roomba 960, see the Clean Map or other information.
