can you use the center grill to cook on? null

Is there an option to add a backsplash to this model? It appears the stove is flat with no back, but there are holes on the top back.

center area appears to be a part of the range for cooking. it actually is the downdraft plenum (void) to suck the fumes back down and through the unit to the floor exhaust. hope this helps.
