“Can this unit access IOS Carplay-enabled 3rd party apps such as Stitcher, NPROne IHeartRadio, etc? I had it installed today and overall I like it but the 3rd party apps show up in the on screen menu but all of them get errors when I attempt to use them.”

Any vendors' CarPlay models will accept and show the same apps. Apple controls this. We have no complaints in regards to those apps. Have you tried your phone at the store to have he same fault?
