“We have Whirlpool electric downdraft which is 30" wide and 21 and 1/2 inches deep. This one says 20" inches deep. Would this one fit in the 30x21 and 1/2 cutout? If it will leave a gap, is there be a way to cover it?”

We just installed the Kitchen Aid 30" gas top.Be advised that the actually cosmetic top of the unit that you see resting on the counter is 30" x 21 and 1/2 inches. The installer assigned to us from Best Buy was able to make adjustments to accommodate our particular installation.
