“This build has a 500w power supply with a Radeon RX 7600 graphics card which it looks like has a recommendation for a 700W power supply . Has anyone run into any issues with this?”

AMD recommends a 550W power supply for the RX 7600 when paired with a Ryzen 9 5900X. This system has a Ryzen 7. As long as you don't overclock, the power supply in this system is completely adequate.
