“Does voice enhancement option stay set or does it default back to regular sound after tv is turned off?”

• Mine remains in the voice enhancement setting. I don't have to reset it every time.

• From my experience it stays set after t.v is off. You have a choice of setting Standard, Voice or Cinema with the soundbar remote. As well as subwoofer level.
