“When using the bright white cycle, I noticed the bleach go in during the start of the rinse. Is that normal ? What if I wanted to use fabric softener too? Will they both go in at the same time and mix during the rinse?”

Yes, it is normal for bleach to be dispensed during the beginning of the rinse cycle in the Bright Whites™ setting. The bleach and fabric softener are dispensed at different stages, so they won't mix.
